Honey Ginger Chicken Marinade

1/2 cup Soy Sauce, Aminos, or TJ's Soyaki 2 Tbsp Honey or Hot Honey 2 Tbsp Apple Cider Vinegar 1 Tbsp brown sugar 1 Tbsp sesame oil 1 tsp fresh ginger 1-2 tsp chopped garlic 1/2 tsp black pepper (or crushed red pepper for heat) Good for 2-3 pounds of chicken...great for air fryer chicken thighs. Whisk ingredients in a bowl before adding to chicken. Marinate for 2-3 hours and air fry or grill over high heat for caramelized & crispy.

Arrachera (Skirt) Marinade

1/2 cup lime juice 1/4 cup orange juice or 1/2 squeezed orange 3 Tbsp Oil 2 Tbsp Soy or Aminos 2 tsp chopped garlic 1/4 chopped cilantro 3 Tbsp Hot Salsa (or added favorite pepper for heat) 1 tsp Salt, Cumin, and Oregano 1/2 tsp black pepper For roughly 2-3 pounds of properly cleaned and tenderized meat. Marinate 4-6 hours in fridge. Grill over high heat, not too long, and let rest before slicing or chopping. Hit with a little salt, pepper, and squeeze of lime before serving.
