Salsa Verde Shrimp

EASY meal coming at ya! This is one of those dinners that tastes like you put WAY more effort into it than you actually did. Quick, flavorful, high in protein, and SO GOOD!
Ingredients:
1 lb raw shrimp
2 garlic cloves, smashed
1 tbsp avocado oil
Kosher salt + pepper
Crushed red pepper
Juice of ½ lime
1 cup salsa verde (I love Trader Joe’s!)
Fresh cilantro
Directions:
Rinse your shrimp and pat dry.
Heat 1 tbsp avocado oil in a skillet.
Once hot, add the smashed garlic cloves and sauté until lightly toasted. This flavors the oil and makes SUCH a difference!
Add your shrimp and season with salt, pepper, and whatever other spices you love.
Flip and cook the other side, seasoning again.
Once the shrimp are cooked through, squeeze ½ a lime over everything and add 1 cup salsa verde.
Let it simmer for a few minutes, then top with fresh cilantro and crushed red pepper.
Serve and EAT!
I served mine with beans + Mexican cauliflower rice, then added some cotija cheese and avocado on top.
Seriously SO easy and SO good. Save this one for a busy weeknight!
