Healthy Breaded Chicken Sandwich

This knockoff McChicken is amazeballs! My son absolutely loves these, and they’re so easy to customize.

No matter how you build it, you’re going to love it! And pssss…you might want to double this for your hungry family!
Ingredients
For the chicken patties, makes 3 large patties
1 lb ground chicken breast
½ tsp salt
½ tsp black pepper
1 tsp onion powder
1 tsp garlic powder
Olive or avocado oil cooking spray
For the coating
1 cup cornflakes
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
For assembly
Light mayonnaise
Shredded iceberg lettuce
Brioche buns, high-fiber wraps or lettuce leaves
Directions
If baking, preheat the oven to 450°F.
In a bowl, mix the ground chicken with the dry spices until evenly combined.
Form into 3, ⅓ lb balls, wet hands first or the chicken will stick.
For the coating, add cornflakes and seasonings to a food processor and blend to a fine ground coating.
Add the coating to a plate and roll each ground chicken ball on the plate to coat it.
Once lightly coated, form the ball into a flat, round patty shape, ensure the entire patty is covered with coating.
Transfer the patty to a baking sheet lined with parchment. Lightly spray the patty with olive oil or avocado oil cooking spray.
Air fry at 375°F for 12-15 minutes, or bake at 450°F for 15-20 minutes until done. The patties are cooked when the internal temperature reaches 165°F and the coating is golden brown.
