Rice Pilaf

This is an old family favorite! The flavors are SO good, and it’s such an easy way to level up your rice game. Also, gluten-free noodles can make this a gluten-free side!


Ingredients

  • 1/2 cup long-grain rice, soaked and rinsed

  • 1/2 cup orzo pasta or spaghetti noodles, broken into small 1-inch pieces

  • 1/2 cup onion, diced

  • 1 tablespoon garlic

  • 1 1/2 tablespoons butter

  • 2 cups chicken broth

  • 1/2 teaspoon salt


Directions

  1. Melt the butter in a pot over medium heat. Add the onion, garlic, and noodles.

  2. Cook, stirring constantly, until the noodles are golden brown.

  3. Add the rinsed rice, chicken broth, and salt.

  4. Bring to a boil, then reduce the heat to low and cover.

  5. Cook for 15 minutes without stirring. Check the rice. If it isn’t quite done, cover and cook for an additional 5 minutes.

  6. Fluff with a fork and serve!


So simple, but SO good. The toasted noodles, butter, onion, and garlic give this rice the best flavor!
