Lighter Mexican Street Corn

This Mexican street corn has quickly become a new family favorite! It’s creamy, tangy and packed with flavor—but using a combination of reduced-fat mayonnaise and nonfat Greek yogurt makes it lower in fat and higher in protein than the traditional version.
We love it as a topping for tacos, served alongside grilled chicken or burgers, or simply eaten as a side dish slaw. It also makes an amazing party appetizer—and the bowl is always empty by the end of the night!

Ingredients
4 cups corn, fresh, frozen or canned
1 tablespoon olive oil
3 tablespoons reduced-fat mayonnaise
3 tablespoons nonfat Greek yogurt
Juice of 1 lime
1 clove garlic, minced
½ teaspoon chili powder
¼ teaspoon smoked paprika
½ cup Cotija cheese, crumbled
1 jalapeño, seeded and diced
¼ cup fresh cilantro, chopped
½ red onion, finely chopped
Salt and pepper, to taste
Instructions
If using frozen corn, thaw it first. If using canned corn, drain it thoroughly.
Heat the olive oil in a large skillet over medium-high heat.
Add the corn and cook for 8–10 minutes, stirring occasionally, until it is heated through and lightly charred in spots.
While the corn cooks, whisk together the mayonnaise, Greek yogurt, lime juice, minced garlic, chili powder and smoked paprika in a large mixing bowl.
Add the warm corn, Cotija cheese, jalapeño, cilantro and red onion to the bowl.
Stir until everything is evenly coated in the creamy dressing.
Season with salt and pepper to taste. Add another squeeze of lime or sprinkle of chili powder if desired.
Serve immediately while warm, or refrigerate and enjoy chilled.

Storage
Store leftovers in an airtight container in the refrigerator for up to three days. Stir before serving and add a fresh squeeze of lime to brighten the flavors.
