Easy Salsa Verde Chicken Enchiladas

We eat Mexican about once a week in our house! And these easy chicken enchiladas are one of my favorite weeknight meals. And yes, I cheat a little on a weeknight and use jarred salsa. 😂 But that’s okay! I LOVE the jarred salsa verde from Trader Joe’s! Grab a couple of jars because I like these enchiladas nice and saucy! Nobody likes a dry enchilada!


These are cheesy, flavorful, easy to throw together and SO good served with beans and my Mexi-Cauliflower Rice. And this recipe is a great one to prep ahead—make the chicken mixture earlier in the day, then assemble and bake enchiladas when you're ready for dinner.


Ingredients

For the Chicken

  • 2 lbs chicken breasts or thighs, cooked and shredded

  • 2 tablespoons avocado oil

  • 1 small onion, chopped

  • 2 teaspoons minced garlic — or more!

  • 1 teaspoon adobo seasoning, plus more to taste

  • 4 tablespoons chopped fresh cilantro

  • Juice of ½ lime

  • Salt and pepper, to taste


For the Enchiladas

  • 12 corn tortillas

  • 2 cups salsa verde, or more if you like them saucy

  • 1 lb Monterey Jack cheese, shredded

  • Olive oil cooking spray


Directions

  1. Make the chicken mixture. Heat the avocado oil in a skillet over medium heat. Add the onion and garlic and sauté until softened.

  2. Add the shredded chicken and cook until warmed through. Season with salt, pepper and adobo to taste. Stir in the cilantro and finish with a generous squeeze of fresh lime juice.

  3. Prepare the pan. Preheat your oven to 350°F. Spray a baking dish with cooking spray and spread about ¼ cup salsa verde over the bottom.

  4. Soften the tortillas. Lightly spray each corn tortilla with olive oil and quickly heat in a skillet until soft and pliable. Transfer to paper towels as you work.

  5. Fill the enchiladas. Add about 2 tablespoons of shredded Monterey Jack and a generous portion of chicken to each tortilla. Roll tightly and place seam-side down in the prepared baking dish.

  6. Repeat with the remaining tortillas. Pour the remaining salsa verde generously over the top and finish with the remaining cheese.

  7. Bake at 350°F for 25 minutes, until everything is hot, bubbly and delicious!
