Pork Tacos & Slaw

These pork tacos did not disappoint! I was doubtful on the slaw...but I’m so glad I tried it because it was delicious!


Taco Slaw

  • 1/3 cup mayo (I use avocado oil mayo)

  • 2 tbsp lime juice

  • 2 tsp hot honey 🔥

  • 2 cups shredded cabbage

  • 1 cup corn

  • 1/4 cup red onion

  • 2 tbsp cilantro

  • 1/2 jalapeño (optional)

  • Salt + pepper


Making the Slaw: Whisk mayo, lime juice, honey, salt + pepper. Toss with cabbage, corn, onion, cilantro + jalapeño. Chill.


Pork Taco Filling

  • 1 tbsp olive oil

  • 1/2 cup finely diced onion

  • 1 lb ground pork

  • 2 tbsp taco seasoning

  • 2 tbsp tomato paste

  • 1/4 cup orange juice

  • Juice of 1 lime

  • Salt + pepper


Cooking the Pork:

  1. Heat oil, cook pork and onion until browned.

  2. Add seasoning and tomato paste, cook 1–2 min.

  3. Add OJ and lime juice, simmer until reduced. Salt and pepper to taste.


Load up warmed tortillas with the pork and slaw, top off with avocado slices, a sprinkle of cotija cheese, squeeze of lime...and enjoy! You can't ever go wrong with tacos!!!
