We love this easy weeknight meal! It’s been a minute since I made this but it’s just as good as I remember. I added in black beans as well. A serving size is 1/4 of the pan, but we didn’t eat nearly that much!
Need to make it carb free? Omit the rice and beans and add cauliflower rice instead!
Ingredients
1.5 pounds of ground turkey (I do a mix of ground turkey and ground sirloin)
1 cup of fire roasted diced tomatoes
1 eight oz can of tomato sauce
1 cup cooked quinoa or rice (I used my Mexican rice)
1 cup of canned black beans
1 cup shredded cheese (I use pepper jack cheese)
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
Optional: Add 1-2 chopped canned chipotle to taste.
Directions
Brown meat and cook rice.
Add diced tomatoes, tomato sauce, chipotle and spices to the meat and mix.
Add rice & beans to the mix and top with cheese.
Bake at 15-20 min.
Serve with your fav veggie & enjoy!
