My kids have become huge fans of shrimp. Who would have thunk. It was this dish that made them cross over to dark side, lol! I love to get the large Argentinian shrimp from Trader Joes. They are so flavorful and already cleaned up for ya. I'm not huge fan of shelling and deveining (aka cleaning out the poop) of shrimp. The other miracle of this dish is that it gets my kids eating zucchini and peppers too. They are not huge fans but for some reason with this dish they love it. So it's always a win win in our house, since it's easy to make, healthy and the kids love it!

This dish comes together in about 20 minutes. Serve it with rice pilaf and a nice squeeze of fresh lemon juice for that citrus kick. Let me know how you like it!
Recipe: Serve 4
Ingredients
1 lb of medium/large shrimp (peeled and deveined)
6 oz of pre-cooked smoked sausage, chopped
3/4 cup diced red bell pepper
3/4 cup diced green bell pepper
1/2 of a medium yellow onion, diced
1/4 cup chicken stock
1 zucchini, chopped
2 garlic cloves, diced
Salt & pepper to taste
Pinch of red pepper flakes
2 tsp Old Bay Seasoning
Olive oil or coconut oil
Optional garnish: chopped parsley
Instructions
Heat a large skillet over medium-high heat w/ oil
Season shrimp with Old Bay Seasoning
Cook shrimp about 3-4 minutes until opaque – remove and set aside
Cook onions and bell peppers in skillet with 2 Tbsp of olive oil or coconut oil for about 2 minutes
Add sausage and zucchini to the skillet, cook another 2 minutes
Put cooked shrimp back into skillet along w/ garlic, & cook everything for 1 min
Pour chicken stock into pan and mix through to moisten everything
Add salt, ground pepper, and red pepper flakes to taste
Remove from heat, garnish with parsley and serve hot
