This pizza pasta dish was soooo good! The family loved it.
Even better is that this is in my nutrition plan!
Ingredients
1 Tbsp olive oil
1 pound Italian sausage
1 cup chopped onion
1 cup chopped bell peppers
2 cups organic chicken broth
2 cups all natural tomato purée
8 oz pasta, I like the quinoa brown rice from Aldi
1 tsp oregano
1/2 tsp garlic powder, onion powder & sea salt
1/4 tsp pepper
Directions
1. Preheat oven to 400°
2. Heat oil in a Dutch oven over medium-high heat.
3. Add Italian sausage; cook, breaking up with a wooden spoon, for 4 to 5 minutes, or until browned.
4. Add onion and 1⁄2 cup bell peppers; cook, stirring occasionally, for 3 to 4 minutes, or until onion is translucent.
5. Add broth, tomato puree, rigatoni, oregano, garlic powder, onion powder, salt, and pepper; stir to combine. Bring to a boil; cover. Place Dutch oven in oven; bake for 25 minutes, or until pasta is tender.
6. Set oven to “broil.” Uncover Dutch oven; stir. Top with mozzarella cheese, remaining 1⁄2 cup bell peppers, and
pepperoni; place Dutch oven under broiler for 1 to 2 minutes, or until pepperoni is crispy and cheese is lightly browned.
