Roasted Pepper Tuna Melts

Roasted pepper tuna melts are amazing!
First, roast some pepper halves in the air fryer at 400 for about 10 minutes.
Then stuff with tuna mixture, top with cheese, and air fry an additional four minutes.
Simple, delicious, and high in protein!
Here’s my favorite Tuna recipe:
3-4 cans 6 oz tuna in water, drained very well
1/4 cup diced red pepper
1 large celery rib diced
1/4 cup red onion minced
2-3 Tbsp chopped parsley
1 tsp lemon juice
1 Tbsp Dijon mustard
1/4 tsp salt
Ground black pepper to taste
1/3 cup plain Greek yogurt
1/4 cup mayo
