Pesto Baked chicken 

Looking for an easy weeknight meal for next weeks meal plan?!?!?

Try this new recipe, it did not disappoint! The key is to butterfly the chicken, so it’s nice and thin. Everyone had seconds and loved it!


  • 3 cups fresh diced tomatoes 

  • 2 chicken breasts butterflied

  • 1 cup pesto, or as needed to cover chicken

  • 1/4 cup parmesan cheese

  • 3/4 cup mozzarella cheese


  1. Preheat oven to 375

  2. Lay tomatoes down in a prepared casserole dish and drizzle some olive oil on top.

  3. Lay chicken breasts on top, sprinkle with salt and pepper, then spread the pesto liberally over the chicken.

  4. Top with parmesan & mozzarella cheese.

  5. Cook for 20-25 min.

Serve with salad or pasta or spaghetti squash!
