Chipotle Cole Slaw

Great recipe for your next BBQ or week night dinner! My kids love this and the cilantro gives it a fresh flavor while the cucumber gives a nice crunch.
¾ bag of cole slaw (2-3 cups)
½ red pepper diced up (big one)
½ English Cucumber diced up
2-3 Tbs. Cilantro chopped
2 Tbs onion of choice
½ cup Olive oil mayo
1 tsp of cider or regular vinegar
1 tsp lemon juice
5 drops of liquid stevia (from trader Joes)
A few tsp of Greek yogurt.
½-1 Chipotle in adobo sauce finely chopped (more = more heat)
1. Chop and mix up all your vegetables.
2. Make your sauce. Mix up everything except the greek yogurt. Then add that in after to thin it out. Last add in chipotle, adding in a little chipotle at a time to desired spiciness. Take out the seeds so it’s not so spicy.
3. Add sauce to veggies and mix up.
