Chipotle Chicken Salad

I love this recipe from my gut protocol cookbook! It's a perfect meal prep lunch for the week which saves me time, effort, energy, and money! My daughter and I have been obsessed with this salad and loving it!


It can be nice and cool for these hot days and so versatile!


Ingredients

  • 3 cups cooked chicken shredded or cut into cubes 

  • 1/2 cup chopped celery 

  • 1/2 cup chopped red pepper

  • 1/4 cup chopped onion

  • 1/4 cup chopped green onion

  • 1/4 cup chopped cilantro

  • 3 Tablespoons mayo

  • 2 Tablespoons plain Greek yogurt

  • 2 Tablespoons fresh lime juice 

  • 2 chipotle peppers finely chopped 

  • 2 teaspoons adobo sauce 

  • 1/2 tsp garlic powder 

  • 1/2 tsp sea salt


Directions

  1. Add chicken, celery, bell peppers, onions, green onions, and cilantro, and mix in a bowl.

  2. Mix together, mayo, yogurt, lime, chipotle and spices in a separate bowl.

  3. Add the dressing to the chicken mixture and mix thoroughly.


Serve in a salad, wrap or open face sandwich.
