I truly believe in fueling our kids like I fuel myself. Sooooo…another high protein pancake recipe coming at ya!!!
I made these for my son this week and he is loving it served with sausage links.
Ingredients
1 cup oat flour (or grind your oats)
1/2 cup flour
2 ½ tsp baking powder
1 tsp cinnamon
1 tbsp ground flax
¼ tsp salt
1 ½ cup low fat cottage cheese
1 tsp vanilla
1 cup egg whites
3 medium very ripe bananas (2 mashed, 1 sliced)
Directions
Preheat oven to 425 and spray a 19x12 baking sheet with cooking spray.
In a bowl, mix the flours, baking powder, cinnamon, flax and salt.
In a food processor, puree the cottage cheese until smooth then add egg white, vanilla and 2 mashed bananas & process.
Add the wet ingredients to the dry and mix or blend.
Spread into the prepared baking sheet and top with chocolate chips and banana slices. Bake at 425 for 12 minutes, turning the pan halfway through the cooking period to ensure it cooks evenly. Serve with peanut butter, banana, and maple syrup, if desired.
