I literally cannot keep enough food in this house for these eating machine teens.
So I bake! These are sooooo good! Kid, hubby & niece approved.
Ingredients
1 cup gluten-free flour blend
1 cup gluten-free rolled oats (old fashioned)
1 teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon pink salt
¼ cup coconut oil, olive oil or avocado oil
¼ cup honey
¼ cup sugar or brown sugar
2 eggs large
½ cup plain dairy-free yogurt (or Greek yogurt if dairy is ok)
¼ cup dairy-free milk (such as almond milk or cashew milk)
1 teaspoon cinnamon
1 teaspoon vanilla
2-3 rip bananas mashed
Directions
Preheat oven to 350
Mix dry ingredients.
Mix wet ingredients (including banana)
Add the dry to the wet.
Put into prepared muffin tin. Sprinkle on top with pecans & cinnamon
Bake 20-25 min
