Breakfast Veggie Hash

Okay, this veggie hash has become a staple in my breakfast. It’s easy to throw together and a great meal prep recipe. I'm a huge advocate of having veggies for breakfast because it has fiber and keeps you full for longer. It also gives you a powerful nutrient dense start to your day.
Ingredients
Package of breakfast chicken sausage chopped
2 peppers chopped
1 large zucchini chopped
2 sweet potatoes or 1 butternut squash chopped
1 large head of broccoli chopped
2 tablespoons olive or avocado oil
Everything but the Bagel seasoning to taste
Directions
Preheat oven to 425.
Line pan with parchment paper.
Toss sausage, veggies with oil and seasoning and spread out on pan.
Roast for 20-30 minutes until veggies are tender.
I love having this hash with one egg and a half cup of egg whites served on top, with a sliced quarter of avocado. Perfection!
