Gluten-Free Banana Bread

“I could eat this banana bread every day for a year!”, my son said to me this past week. The kids are loving this gluten free banana bread recipe.


I also use lactose free milk to make the buttermilk in this recipe.

Ingredients

1.5 cups gluten-free flour

1.5 cup rolled oats blended

3/4 cups coconut sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

½ teaspoons salt

1-½ cup buttermilk or make your own

2 whole eggs, lightly beaten

¼ cups unsalted butter, melted (or olive oil or avocado oil)

3 large ripe bananas, mashed

¾ cups dairy free dark chocolate chips


Directions

  1. Mix dry ingredients

  2. Mix wet ingredients

  3. Add wet to dry & mix

  4. Add in chocolate chips (we did Trader Joe’s dairy free dark chocolate)

  5. This makes one casserole dish or two bread pans divided. Optional add chopped pecan on top and sprinkle cinnamon.

  6. Bake at 350 for 35 to 40 minutes

I use a casserole dish and cut it up evenly into 10 pieces so my kids could have a piece each morning for their breakfast. They will have this with a couple sausage links.
