Korean Beef Bowls

Korean beef bowl! An easy week night meal that’s high in protein and veggies, and you can use cauliflower rice to reduce the carbs! My kids love this!

Ingredients

  • 1/2 onion, diced

  • 2 inches fresh ginger, peeled and grated on a microplane or 1 Tbsp ginger paste

  • 1 Tbsp toasted sesame oil

  • 2 lbs ground sirloin

  • 1 tsp red pepper flakes

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 cup coconut aminos

  • 1 tsp fish sauce

  • 4 cups cauliflower rice (can sub white rice)

  • 6 cups greens of choice— I like lightly stir fried and salted cole slaw mix (1 bag)

Optional sauce: 1/4 cup mayo + 1 Tbsp hot sauce

Optional toppings: cilantro & green onions

Directions

1. Cook rice or heat cauliflower rice.

2. Heat a large skillet over medium-high heat and add sesame oil. Once hot, add in ground beef. Break the beef up into small bits.

3. Add the shallot, ginger, red pepper, garlic powder, and onion powder and mix with the beef. Continue cooking, stirring occasionally, until the meat is browned and developing some crispy bits, about 8 minutes.

4. Add the coconut aminos and fish sauce and cook for another 3-4 minutes.

5. Make your sauce. Serve beef over a bed of greens with rice or cauliflower rice. Top with optional sauce and enjoy!!!!
