So who doesn't like a good cream sauce? One of the "bad" thing I probably made for us every few weeks was pasta and cream sauce my kids called it but we all call it Alfredo sauce, lol. Ever since I started this clean eating journey my family (and I!) have seriously missed that dish. So to Pinterest I went looking for a clean sauce recipe. I tried a few but found one that fit our program perfectly made with a nice high protein Greek Yogurt! I added in some roasted red peppers and ta-da...a great sauce recipe!
You can make this with whole wheat pasta, chicken and broccoli or go all veggies with spaghetti squash and roasted vegetables! Either way it's a win win!
Ingredients
1 16 oz jar Roasted Red Peppers 15 oz no salt tomato sauce 3 cups of cooked chicken (shredded or grilled and diced) 4 cups of cooked broccoli 4 oz whole wheat/quinoa pasta cooked 1 cup parm cheese grated 1/2 cup 1% greek yogurt
Directions
1. Cook broccoli, and pasta. Grill chicken and chop. 2. Blend peppers in food processor. Warm up peppers with tomato sauce in pan. Once warm and bubbly turn off heat and blend in yogurt, salt and pepper. 3. Then toss in chicken, broccoli, pasta and cheese. Put back on heat on low and heat until warm enough to serve. 4. Serve with salad and enjoy!
