Chicken Broccoli Mac n cheese

This is a family favorite. You still get the pasta with added veggies and protein to make this a well rounded meal. I typically serve with green beans for more veggies of course. It's an awesome week night meal too as it's fast!


Ingredients

4oz whole wheat macaroni

2 tsp butter

2 T flour

1.5 cups unsweetened almond milk

1 1/4 cups cheddar cheese

3 cups diced cooked chicken

4 cups broccoli

1 tsp salt

1/2 teaspoon black pepper


Directions

  1. Cook noodles & black broccoli (set both aside)

  2. Melt butter in sauce pan on med heat.

  3. Whisk in flour for a min

  4. Slowly mix in almond milk and whisk 1 to 2 minutes until thickened

  5. Reduce heat to low. Add cheese, whisking constantly for 2 to 3 minutes until melted

  6. Add chicken, broccoli, salt and pepper. Stir constantly for one minute until heated through.

I like to rub at my chicken down with the Cajun spice and then brown in the Instapot and cook. Also add in spicy cheddar for extra kick!
