You guys!!!! This was so good and definitely going into rotation in our house! I had my doubts because of all the Greek yogurt… but the Cajun seasoning with the diced tomatoes gives it an amazing creamy flavor!
With nearly 40 grams of protein per serving, it’s a win-win for my hungry teenagers! And healthy!!!
Ingredients
1 Box of Barilla protein pasta
1 pound or more of chicken, diced
1/2 cup of shredded parmesan cheese
2 Tbsp olive oil
1.5 cups nonfat Greek yogurt
1/4 cup milk
15 oz can fire roasted diced tomatoes
1 medium onion diced
2 Tbsp Cajun seasoning
1/4 teaspoon smoked paprika
Directions
1. Mix your diced chicken with 1 tbsp of Cajun seasoning and saute with onions. Brown on all sides until done and set aside.
2. Boil your pasta.
3. While pasta is boiling, mix the Greek yogurt with 1 tbsp Cajun seasoning, 1 tbsp olive oil and 1/4 tsp paprika.
3. Mix your cooked pasta with the chicken, Greek yogurt mix, fire roasted tomatoes & milk. Add cheese and mix. Heat until hot and bubbling.
4. Serve with your fav veggie side...or just add them in!
This is about 6 servings and comes out to 39 grams of protein and 480 calories per serving!!! Enjoy!
