Starbucks Copycat Eggcups

These are pretty legit. I've always thought egg cups were dry...the addition of cottage cheese to these combined with cooking them with the water at the bottom is genius! They are moist and amazing tasting! Warning: addicting too!


  • 1/2 cup egg whites

  • 7 eggs

  • 4 slices bacon, cooked and crumbled I used nitrate-free

  • 1 cup reduced-fat cottage cheese

  • 1/4 cup 1/2 &1/2

  • 1.5 cup 1/2 gouda

  • salt and pepper to taste

  • 1 cup water


1. Put a casserole with 1 inch of water in the lower rack of your oven.

2. Preheat oven to 300

3. Mix All your ingredients in a blender.

4. Add to a prepared muffin tin.

5. Bake for 30 minutes.


I like to make these for the week on meal prep Sundays. Enjoy!
