These are pretty legit. I've always thought egg cups were dry...but the addition of cottage cheese combined with cooking them with the water at the bottom is genius! They are moist and amazing! Warning: addicting too!
1/2 cup egg whites
4 slices bacon, cooked and crumbled (I used nitrate-free)
1 cup reduced-fat cottage cheese
1/4 cup half & half
1.5 cup Gouda shredded
Salt and pepper to taste
1 cup water
Place a casserole dish with 1 inch of water in the lower rack of your oven.
Preheat oven to 300.
Mix all your ingredients (minus bacon) in a blender.
Add bacon crumbles to a prepared muffin tin and pour the egg mixture on top.
Bake for 30 minutes.
I like to make these for the week on meal prep Sundays. Enjoy!
