Um… Spinach for breakfast?… I’ll take it!
These have been my daily breakfast for the past 3 weeks and I’m obsessed!!!!
I’ve been consistently getting in 2 cups of spinach a day! One in these pancakes and another in my shakes. I love these pancakes with a veggie punch!
Ingredients
2 eggs
1/2 banana
1/4 cup egg whites
Dash of cinnamon
Dash of baking powder
Splash of vanilla
1/4 cup oats
1 cup spinach
Optional chocolate chips
Directions
Place all ingredients in a blender and blend until smooth. Drop onto a hot greased pan and cook one large pancake or several small ones. Serve with drippy peanut butter, honey & a few dabs of Greek yogurt, sweetened with Stevia.
Need extra protein? Throw in some sausage! This breakfast has 30g of protein!!
Who knew green pancakes could taste so good. If healthy eating doesn’t taste good, then you're not doing it right!!!
