Pizza without all the calories!

I love pizza! I especially love pizza and wine Friday. Each week my bestie and I get together with our kids, drink wine and make memories! It's seriously my favorite thing to do! That said I don't always like the bloat I have the next day after Pizza and wine Friday....

So last Friday I decided to change it up. Now that I'm doing this new nutrition program, my goal is to eliminate carbs at night which doesn't fit very well into the pizza Friday plan...now does it?!?! I looked up Cauliflower pizza recipes and came up with this one. First off it's super easy to make and comes together in like 10 minutes! Secondly it tastes soooo good! It is not lacking in flavor and I really didn't miss the regular pizza, which I made as well since there are so many of us. Even my BFF got to try the cauliflower and do ya know what? She ate more of that then the regular! Serve this with a green salad and enjoy!


Cauliflower Pizza Crust Recipe

Ingredients

  • 1 head bag of frozen Cauliflower (3-4 cups)

  • ¼ cups Parmesan Cheese

  • ¼ cups Mozzarella Cheese

  • ¼ teaspoons Kosher Salt

  • ½ teaspoons Dried Basil

  • ½ teaspoons Dried Oregano

  • ½ teaspoons Garlic Powder

  • 1 Tablespoon Almond Meal (optional)

  • 1 whole Egg






Directions

1. Place a pizza stone in the oven, or baking sheet. Preheat oven to 450ºF. On a cutting board, place a large piece of parchment paper and spray it with nonstick cooking oil. 2. Place the cauliflower in a microwave safe bowl & cover. Cook for 4 min. Dump cooked cauliflower onto a clean tea towel & cool. Squeeze cauliflower dry removing all water. Dumped squeezed cauliflower into a bowl. 4. Add parm cheese, mozz cheese, salt & spices. If you don’t have enough cauliflower then add in almond meal to bring you closer to 3 cups.  Add in egg and mix away. 5. Use your hands to form the dough into a crust on your oiled parchment paper. Pat it down.  You want it nice and tightly formed together. Don’t make it too thick or thin either. 7. slide the parchment paper onto baking sheet or stone. Bake for 8-11 minutes, until golden brown. 8. Brush with olive oil & add on cheese & toppings.  Cook  5-7 minutes until cheese melts and it’s bubbly. 9. Allow to cool for a a few minutes to firm up before cutting.
