One-Pan Spinach Pancakes

Meal prep hack! If you're not on the one-pan pancake wagon then it’s time to simplify your life and do it!

I made 3 pans this week… gluten free Blueberry for my daughter, banana for my son, and spinach banana for me! We are not high maintenance at all 😂

Seriously tho…The easiest meal prep ever! I look forward every day to my oats and spinach pancakes with peanut butter and honey on top!


Ingredients

1.25 cups oats

5 cups fresh frozen spinach (I freeze mine, the consistency is better)

10 eggs

2.5 bananas

1 teaspoon vanilla

1 teaspoon cinnamon

2 teaspoons baking powder

Optional add in liquid stevia or maple syrup to sweeten a little


Directions

1. Blend all the ingredients.

2. Pour into a greased parchment lined pan.

3. Put in 400 oven for 15 min.


Let cool and then slice up and refrigerate for the week. I do 3 rows across and 5 down, 1 row per a day! Enjoy!
