Oat Flour Chocolate Chunk Banana Bread

My daughter hates egg so the struggle is real trying to come up with healthy breakfast options besides smoothies. We love this recipe and the oats and Greek yogurt give her the fiber and protein minus the high sugar content that she needs! I love it as a snack too! Add in some almond butter for a super packed nutritious snack.


Ingredients

  • 3 Cups of rolled oats blended (or 2.75 cups oat flour)

  • 3 large bananas smashed

  • 1 cup of greek yogurt (plain, no sugar)

  • 1/3 cup maple syrup

  • 2 eggs

  • 2 tsp cinnamon

  • 1/8 tsp salt

  • 3/4 tsp baking soda

  • 1 tsp baking powder


Instructions

  1. Preheat oven to 350 and grease a bread pan.

  2. Using a food processor, grind the oats until fine.

  3. In a large mixing bowl mash bananas and add in maple syrup, eggs and greek yogurt.

  4. Separately, add cinnamon, salt, baking soda and baking powder to the oat flour and mix evenly.

  5. Next add the wet to the dry mixture and mix until completely combined.

  6. Cook for 40-50 minutes.

Keep refrigerated for longer shelf life.

This is a great breakfast or afternoon snack! You can also put in muffin tins.
