Kids love this Panera knock off recipe and been asking for it! So...shhhhhhh I made a few modifications cause the old stuff is so heavy and gives certain people gas! TMI?!?!? Traded out the cream for almond milk, half the butter for olive oil, flour for whole wheat flour and halved the cheese. This can easily be made vegan by using ghee and omitting the cheese. Serve it with a green salad and some clean dressing!
Ingredients
1 teapoon olive oil
1/2 med onion chopped
1/8 cup butter melted
1/8 cup olive oil
1/4 cup whole wheat flour
2 cups almond milk (unsweetened)
2 cups of chicken stock
4 cups of chopped bite size broccoli
1-1.5 cups of grated cheddar cheese
Directions
Saute onion in olive oil, set aside.
Cook butter and olive oil and flour using whisk over med heat, 2-3 min. Stir constantly adding almond milk.
Add chicken stock and simmer 10 min.
Add the broccoli, carrots and reserved onions & simmer for 20 min over low heat.
Add salt and pepper. Take out 1-1.5 cups of broccoli and blend. Then return to heat and add cheese.
I'm so happy that we can enjoy this yummy treat without all the bad stuff!
